How Can Kitchen Grease be so Destructive?

The grease emitted from roof top kitchen exhaust fans collects and pools on top of commercial cooking operations. This quickly pooling grease can be very destructive and even cause fire. Pooling grease can saturate the commercial cooking operation’s roof, causing irreversible blistering, swelling, and even cracking of roof material.
